BIEDERT CREAM MIXTURES (Biedert), proposed by F. Biedert as food for infants. Biedert based his proposal on two considerations. He held the view that casein from cow's milk is almost not digested by the child; in order to, as much as possible, neutralize this property of cow's milk, he considered it necessary to compose the child's food in such a way that it contains a limited amount of milk as a carrier of casein. But at the same time, in order to increase the caloric value of the food, Biedert introduces fat in the form of cream, which he considered especially valuable a nutritional element for childhood. Thus composed food, receiving the name B. s. s., for a long time enjoyed favor from pediatricians. This food was prepared in 6 modifications, each of which was intended for a specific group of children, united by age and weight. The distinctive feature of this food is the limited content of protein in it, which is its most vulnerable side. The lack of protein is a significant negative property of this type of food both from the point of view of the need for plastic material in cases when it is used for feeding for a long time, and in terms of its therapeutic value in diseases. At the same time, B. s. s. cannot be classified among the typically fatty types of feeding, since the fat content in them is relatively limited.
