LEGRAND DU SAULLE Henri (Henri Legrand du Saulle, 1830-86), an outstanding French psychiatrist, known mainly for his works in the field of forensic psychiatry. For many years he edited the "Annales medicopsy-chologiques". In 1868, together with Gallard and Devergie, he founded the Societe de medecine legale. -Most important works: "De la monomanie incendiaire" (thesis, P., 1856); "La folie devant les tribunaux" (P., 1864); "Prognostic et traitement de l'epilepsie" (P., 1869; 2nd ed., P., 1873).- L. was the first to describe one of the common forms of obsessive neurosis: morbid doubt and fear of touching objects ("Folie du doute avec delire du toucher", P., 1875). LEGUMIN, a protein, vegetable globulin. Found in the seeds of legumes (Leguminosae). It constitutes the main reserve protein of pea, vetch, and lentil seeds, where its content reaches up to 50% of the total protein reserve. Insoluble in water, dissolves in a 5% NaCl solution. Unlike animal globulins, it does not precipitate when the NaCl and MgSO4 solution is saturated. Relatively easily broken down by enzymes of the gastrointestinal tract. The hydrolysate is very rich in glutamic acid (16.3%) and arginine (5.05%).
